Say goodbye to your grandfather’s steakhouse, and say hello to see-and-be-seen buzz, Russian novel–sized wine lists, and molecular mixology. These sizzlin’ steakhouses also deliver prime cuts in a thousand permutations of meaty perfection—from grass-fed and dry-aged to adobo-rubbed and pepper-crusted. Chophouses have never paired porterhouses and panache so well.

Las Vegas
N9NE Palms, 4321 W. Flamingo Rd., West Flamingo, 702-951-7000 n9negroup.com
The Draw: This outpost of the Chicago original was founded by Michael Morton (yes, that Morton), so you can be sure the prime aged beef is up to par—as are the share-sized desserts. The slick, contemporary space is also a magnet for beautiful people. The Scene: While the male-to-female ratio swings toward the former—and all varieties are represented, from young fratty types to silver-haired foxes—expect plenty of T&A on display as well. The bar here is a primer for partying upstairs at ghostbar, Moon, and the Playboy Club. Mon–Thu 5–11pm, Fri–Sun 5–11:30pm. Hot Tip: If you’re traveling with a group, consider the Bachelor/ette package (even if no one is getting married), which includes a four-course steak dinner and VIP access to the Palms nightclubs.
BRAND Monte Carlo, 3770 Las Vegas Blvd. S., Center Strip, 702-693-8300 lightgroup.com
The Draw: This restaurant-cum-lounge by the Light Group affords a voyeuristic view of the casino floor. Interiors by Graft Lab (the Berlin-based design firm behind sister restaurants Fix and Stack) include undulating cowhide-bedecked ceilings. The Scene: The Monte Carlo is not exactly the coolest place in town, but the Light Group’s steakhouse is a big step forward for this rather less-than-hip hotel. Clientele tends toward a well-heeled younger set traveling in packs. Sun–Thu 5pm–midnight, Fri–Sat 5pm–2am. Hot Tip: For family-style dinners, try The Ultimate Steak, an 8.6 pound porterhouse, or The Ultimate Surf & Turf Dinner, which couples enough steak to feed a small country with platters of crab, shrimp, and lobster.
Botero Encore Las Vegas, 3131 Las Vegas Blvd. S., North Strip, 702-770-5310 encorelasvegas.com
The Draw: This sexy, circular space is centered on Botero’s massively rotund goddess of fertility, and the whole vibe is island-chic—from the dark wood, tufted white columns, and cushy white leather armchairs, to the palm fronds, tiled mosaic floors, and sliding glass doors opening onto the pool deck. The Scene: Though Botero attracts a fair amount of serious foodies, who come for the dry-aged rib eye with chimichurri sauce, the artichoke-and-fennel-stuffed loup de mer, and the garlic-roasted bone marrow, the attractive steakhouse also draws a stylish pre-clubbing set—after all, XS is just a few steps away. Sun–Thu 5:30–10:30pm, Fri–Sat 5:30–11pm. Hot Tip: If you’re willing to dine early, the Taste of Wynn prix-fixe menu includes three courses for $48 (Sun–Thu 5:30–6:30pm).
