Say goodbye to your grandfather’s steakhouse, and say hello to see-and-be-seen buzz, Russian novel–sized wine lists, and molecular mixology. These sizzlin’ steakhouses also deliver prime cuts in a thousand permutations of meaty perfection—from grass-fed and dry-aged to adobo-rubbed and pepper-crusted. Chophouses have never paired porterhouses and panache so well.

STK 26 Little W. 12th St., Meatpacking District, 646-624-2444 stkhouse.com
The Draw: This is not your daddy’s steakhouse. Sleek and chic, STK sits, appropriately, in the heart of the Meatpacking District. The Scene: The spacious interior features white leather banquettes, a sexy bar presided over by grand—if surreal—plaster tusks, and a trendy, carnivorous, cocktail-swilling crowd. Purists will dig the menu, where hefty slabs of dry-aged beef are listed by size—small, medium, and large. Choose from the retro-with-a-twist cocktail menu that includes a tasty cherry cosmo, a gin fizz, and a “Not Your Daddy’s” Manhattan. Daily 6pm–2am. $$$ Hot Tip: If you’re in the mood for a buzzy night out, come on a Saturday. After dinner, you can usually skip the line for easy access to the nightclub TenJune, which is under the same roof.
Smith & Wollensky Grill 201 E. 49th St., Midtown, 212-753-0444 smithandwollensky.com
The Draw: This is the place to go for a Flintstones-esque sirloin burger and irresistible fries. You might want to wear your loosest pants. The Scene: A masculine setting of wood floors and black-and-white photos draws Midtown deal-makers and after-work crowds. Daily 11:30am–2am. $$ Hot Tip: Come for lunch for excellent steak specials, and check the website for the restaurant’s twice-a-year “wine week,” when you can taste ten wines for $10 at lunch.
Dylan Prime 62 Laight St., Tribeca, 212-334-4783 dylanprime.com
The Draw: Beef is just the beginning at this candlelit chophouse, where the cuts are thoughtfully seasoned and extremely generous. The Scene: The crowd is younger and sexier than you’d expect from a meatery—there’s something about the fine smell of a porterhouse steak that gives the place an attractive air of primal seduction. Mon–Wed noon–2:30pm and 5:30–11pm, Thu–Fri noon–2:30pm and 5:30pm–midnight, Sat 4:30pm–midnight, Sun 5:30–10pm. $$$ Hot Tip: Since this is near Wall Street, late afternoons and early evenings get a little stuffy. Come after 8pm to see Dylan Prime at its best.
